PISTACHIO MARZIPAN BLISS BALLS

These nutrient-dense bites are low glycemic, thanks to the inclusion of nut butter, nut flour & chopped nuts that help regulate blood sugar levels, reducing the risk of insulin spikes & inflammation that contribute to breakouts. The oat flour & coconut flour also add dietary fiber that promotes gut health & thereby skin health. 

INGREDIENTS

• 1 cup cashew butter

• 1/2 cup almond flour

• 1/4 cup coconut flour

• 1/4 cup gluten-free oat flour

• 1/3 cup maple syrup

• 2 tsp almond extract

• 1/2 tsp vanilla extract

• 1/3 cup chopped pistachios

• 1/4 tsp sea salt

DIRECTIONS

In a mixing bowl, combine the cashew butter, almond flour, coconut flour, oat flour, maple syrup, almond extract, and vanilla extract. Mix well until you have a smooth, dough-like consistency.

Fold in the chopped pistachios and sea salt into the dough, making sure they are evenly distributed.

Take small portions of the dough and roll them into bite-sized balls using your hands.

Place the bliss balls on a baking sheet lined with parchment paper and refrigerate them for at least 30 minutes to firm up.

Once chilled, the Pistachio Marzipan Bliss Balls are ready to enjoy!

Store them in an airtight container in the refrigerator for up to a week.
